To change the text message background on your iPhone, go to Settings > Wallpaper. Choose a new wallpaper that you like from the Camera Roll or the default options. Unfortunately, you can't set custom backgrounds specifically for Messages, but setting a new wallpaper will change the overall look of your messaging app.
