To change the background color in Adobe Illustrator, first, select the 'Artboard' tool from the toolbar. Then, draw a rectangle that covers the entire artboard. With the rectangle selected, choose your desired color from the Swatches panel or Color Picker. Send the rectangle to the back by right-clicking and selecting 'Arrange' > 'Send to Back'. Your background color is now set!
